i too wanted this. I tried it on my own. I used 1/2 can black beans, blended with some applesauce, for one box of brownies. I think any mix will work. I also used applesauce instead of oil. i did use a little oil (2 tbs). My family really liked this recipe
Also disappointing is the lack of the nutritional info she was talking about like evening out glucose. My daughter type 2 diabetic and this would've been more helpful. I think it was the oats & beans.
I believe all Joy did was use store bought brownie mix, rinsed one can of black beans with water in a colinder, then pureed them with a little water and mixed them in the brownie mix prepared from the box instructions.
This recipe from Bob's Red Mill is our family's favorite breakfast cookie recipe....
5 Grain Rolled Cereal Daybreak Cookies Contributed by Marie Gilliam, Bob's Red Mill
3 cups 5-Grain Rolled Cereal
2-1/4 cups White Flour, Unbleached
1-1/2 cups Butter
3 Eggs
1-1/2 tsp Baking Soda
1-1/2 tsp Sea Salt
1-1/2 tsp Vanilla Extract
1 cup Coconut Flakes
1 cup Cranberries
1 cup Pecan Halves
3/4 cup Water
2-1/4 cups Brown Sugar
1 cup Raisins (Unsulfured)
Directions
Preheat oven to 375 degrees. Lightly grease 2 cookie sheets; set aside.
In a large bowl, sift together the flour, baking soda and salt.
By hand or in a small chopper, chop pecans coarsely; set aside.
In another bowl blend butter, sugar, vanilla and water together. Beat eggs and add to butter mixture; stir flour mixture into egg and butter mixture; add cereal and all remaining ingredients; mix well.
Drop by teaspoonfuls onto greased cookie sheet. Bake 10-12 minutes. Cookies should be soft in center and edges lightly brown.
Yield: 24 cookies
